Apple and Honey Loaf Cake

It feels like it has been ages since we made a loaf cake so naturally this was the choice of bake this week the boys and l made.
My boys are honey monsters and they were not happy l was using 'their' honey in the cake ( honey on toast is a popular breakfast in our house) however we have plenty in the cupboard so we were making this....
Loaf cakes are simple to make, they just take a little longer to bake in the oven, however this is plenty of time to get other things done while you wait for the oven buzzer.
This Apple and Honey loaf cake is sweet, warming and feels delicious to eat this time of year. I chop the apples roughly but ensure l have different size pieces so the when devouring a slice you are hit with the baked apple and its own sweetness. Serve warm of cold with an extra drizzle of honey and a cup of tea. Your guests wont leave.

Ingredients
200g of Self raising flour - sieved
200g of Caster Sugar
70g of Butter
3 Apples
2 Eggs
2 tbsp of Honey
1 tsp of Cinnamon
Equipment
Loaf cake tin
Greaseproof paper
Spatula
2 Mixing bowls
Electric whisk
Cooling rack
Chopping board
Knife
Peeler
Method
Preheat the oven to 160C
Line the loaf tin with greaseproof paper and leave to the side ready for the mixer.
In the mixing bowl place the butter and sage and using the electric whisk cream the butter and sugar together till it is pale and fluffy.
Add the eggs to the butter and sugar one at a time with the whisk on a low setting. Pour in the honey and continue to whisk.
In the other mixing bowl add the flour and cinnamon, roughly mix them together. Begin to add the flour to the other mixing bowl with the whisk on a low setting. When combined leave tin the bowl while you prepare the apples.
Using only two of the apples, peel, core and roughly chop them. Add these to the batter mixture and stir with the spatula to ensure they are mixed within the batter.
Pour the mixture into the loaf tin and ensure it is evenly filled.
With the third apple peel, cut and core this into quarters and place on the top of the loaf cake, don’t worry if the apple pieces begin to sink in the batter. Drizzle with extra honey and place in the oven for 1 hour.
When baked place a skewer in the centre to check the cake is baked throughout.
Leave the cake to cool in the tin for 30 minutes before transferring to the cooling rack and leaving to cool completely.
Serve with an extra drizzle of honey and a cup of tea.
