Apricot and Almond Tart

An apricot and almond tart is the perfect pudding to make when you are in need of a pudding that is simple and quick to make with minimum fuss.

The flaky pastry is delicious and buttery and the apricots are juicy, sweet and warming as they are covered in ginger.

You are able to make your own puff pastry or grab ready to roll pastry for convenience. Serve this tart warm with a spoonful of creme fraiche for a little treat.

Apricot and Almond Tart

Prep time: 20 Minutes                    Cook time: 20 Minutes               Makes: 9 Slices



Ingredients


1 pkt of Ready to roll puff pastry

2 tins of Apricot halves

120g of Apricot jam

4 tbsp of Ground almonds

1 tbsp of Icing sugar

2 tbsp of Ground ginger



Equipment


Baking tray

Greaseproof paper

Spoon

Sieve

Knife

Large chopping board

Pastry brush


Method


  1. Preheat the oven to 180C and line the baking tray with the greaseproof paper.

  2. On the chopping board lay out the ready roll pastry. Using the knife score a line about 2 cms wide around the edge of the pastry. Be careful to not cut the pastry away. This will be the border of the tart.

  3. Transfer the puff pastry to the baking tray.

  4. Sprinkle the ground ginger and ground almonds over the puff pastry covering all areas.

  5. Place the apricot halves over the almonds and ginger tightly together, with the cut side of the apricot facing up so you are able to see the centre of the apricot.

  6. Sieve the icing sugar over the top of the apricots  and sprinkle some more ground ginger and place in the oven to bake for 20 minutes or until the pastry begins to golden.

  7. While the tart is cooling spread the apricot jam over the tart in the gaps using the spoon and the pastry brush over the apricot halves to which the jam will begin to warm and be sticky.

  8. Serve warm or cold with creme fraiche or whipped cream or topping of choice.

  9. Enjoy!
