Banana Mousse

Where do you get your baking inspiration from? do you wake, knowing what you would like to make? or are you a planner ?
For us, today's inspiration came from one of the many books that my youngest and l read at 5am this morning. 'Chocolate Mousse for a Greedy Goose' is one of the boys favourite books and after ready this at stupid O'clock my youngest really fancied chocolate mousse.
However l did have to disappoint him as we didn't have enough chocolate to make that so in my wisdom and with a whole lot of bananas in the fruit bowl l convinced him we can make banana mousse for the greedy goose and so we did and here we are.
This banana mousse recipe is very simple to make and only a few ingredients are required. We have used honey as a natural sweetner instead of sugar. The taste is creamy and smooth and the perfect treat during these hot days. Why not try to make yourself and let us know what you think.

Prep time: 10 minutes Cook time: refrigerate for 2 hours Makes: 6 Servings
Ingredients
6 Biscoff biscuits and extra to crumble.
5 Bananas
2 tbsp of Honey
200ml of Whipping cream
Squeeze of Lime juice
Squirty cream
Equipment
Blender
Knife
Chopping board
6 serving jars
Baking tray
Method
Lay out the serving jars on the baking tray.
Peel and slice the bananas into thin slices and place into the blender. Add the honey and lime juice and begin to pulp the ingredients together until a smooth texture is formed.
Add the whipping cream to the blender and continue to blend until all the ingredients are combined.
Divide the mousse between the serving jars and place in the fridge for a minimum of 2 hours to set.
When the mousse has set, swirl the squirty cream on each of the puddings and add a Biscoff biscuit to each and using the spare biscuits crumble some over the cream.
Serve immediately.
