Biscoff Traybake

It would not be the summer holidays if we didnt bake a traybake to enjoy. As our followers, you will know l love a traybake, they are simple to make, make a larger quantity so plenty of cake in stock when friends come to the house and there are so many flavours to make and enjoy.


We are currently loving Biscoff and so the boys and l made our own Biscoff traybake and l have to say it is a taste sensation.

The sponge contains cocoa and Biscoff and topped with Biscoff buttercream, it is very sweet tasting. We added some extra flavour and texture with a mini Biscoff biscuit.

The reipe is easy to follow and makes upto 9 servings depending on the size you desire. Let us know your thoughts if you make this summer sun treat.

Biscoff Traybake


Prep time: 10 Minutes                     Cook time: 20 minutes                                Makes: 8 slices



Ingredients


Sponge


200g of Butter - room temperature and cubed

200g of Self raising flour

200g of Light brown sugar

80g of Biscoff spread

2 Eggs

1tbsp of Milk


Buttercream


250g of Icing sugar

200g of Biscoff spread

150g of Butter- room temperature and cubed


10 Biscoff biscuits




Equipment


2 mixing bowls

Electric whisk

Greaseproof paper

9x9” baking tray

Spatula

Cooling rack



Method


  1. Preheat the oven to 160C.

  2. Grease the baking tray and line with the greaseproof paper.

  3. In the mixing bowl place the sugar and butter and cream together with the electric whisk. When the butter and sugar mixture is pale and fluffy add the Biscoff spread and continue to whisk until the ingredients are combined.

  4. Add the milk and eggs one at a time while whisk is on a low setting.

  5. Using the spatula, add the flour and fold into the mixture.

  6. Pour the mixture into the baking tin and use the spatula to spread the mixture out evenly.

  7. Place in the oven and bake for 20 minutes. TIP! Check the traybake is ready by putting a knife into the middle of the traybake. If the knife comes out clean then the traybake is ready.

  8. Leave the traybake in baking tray to cool for 5 minutes before transferring to the cooling rack. Allow the traybake to cool completely before making the buttercream topping.

  9. Begin to make the buttercream. In the other bowl place the icing sugar, butter and Biscoff and whisk together  until the ingredients are combined and a buttercream is made.

  10. Spread the buttercream over the Biscoff traybake evenly and crumble one of the biscuits over the top.

  11. Cut the traybake into 9 equal slices and place a biscuit on each slice.

  12. Serve when required.

  13. Enjoy!.
