British Pudding Day - 9th November
All hail the great British ‘pud’
Today is a day of indulgence for pudding lovers. Will you be dusting off your apron and making something to celebrate British Pudding day? Or head to your local shops and buy something tasty?
What would you say was your favourite British pudding? A Bakewell tart, jam roly poly, sponge pudding? Maybe a rice pudding or a crumble?
In honour of British Pudding Day we have made a simple pear and ginger crumble to enjoy this evening.

Ingredients
For the filling
5 Pears - peeled and cut lengthways
80g of Caster sugar
50g of Butter
5g of Crystallised ginger - grated
4 tsp of Water
1 tbsp of Ground ginger
For the topping
120g of Plain flour
60g of Butter - cubed and softened
30g of Caster sugar
30g of Demerara sugar
5g of Pecan halves - chopped
Equipment
Saucepan
Wooden spoon
Mixing bowl
Baking tray
Crumble dish
Kitchen roll - you will get messy
Method
Preheat the oven to 180C
In the mixing bowl add the flour and butter and begin to rub together with your finger tips lightly. When breadcrumbs begin to form add the sugars and continue to rub together. TIP! Be careful to not overwork the topping.
Scatter the topping onto the baking tray and place in the oven for 10 minutes, until golden.
Begin to make the filling by placing the water and caster sugar into the saucepan on a medium heat and allowing to melt to make a syrup texture. Leave till a caramel colour is formed.
Add the butter and pears to the saucepan and mix together to coat the pears in the syrup. Leave on the heat for 6 minutes.
When the pears become soft, pour into the crumble dish you are using and leave to cool.
Pour the topping over the top and place in the oven for 10 minutes.
Sprinkle some pecan halves on the top and serve with ice cream or cream.
