My boys are banana men (if you are within my age bracket, you will remember this childhood program banana man). Bananas are always in my shopping trolley, whether eaten as a snack, or used within our baking adventures.

We had a different kind of snack today... and in honour of it being banana day in the US we have made caramelised bananas. This recipe is very simple and quick to make. All you need is butter, sugar and of course some bananas !.

We served our caramelised bananas with some coconut yoghurt and sprinkled with a little biscoff biscuit and enjoyed for snack this morning. You can serve with any type of yoghurt or cream if that is your thing.

All this talk about bananas.... did you know.... that bananas are the most consumed fruit and the cheapest to buy worldwide hence why they are so popular. In the UK 5billion bananas are eaten and this blew my mind.. that you can actually eat banana skin ( I won't be doing that).

See the recipe below for caramelised bananas and let us know what you think of them!.

Enjoy!

Caramelised Bananas

Prep time: 5 Minutes                Cook time: 10 Minutes                        Makes: 4 Servings

Ingredients

4 bananas

40g of light brown sugar

30g of Butter

30g of Coconut yoghurt

2 Biscoff biscuits

1 tbsp of Cinnamon

Equipment

Non stick frying pan

Chopping board

Knife

Foil

Spatula

Fish slice

Plate.

Spoon

Method

  1. In the frying pan melt the butter.

  2. While the butter is melting cut the bananas in half lengthways while they are in their skin. Do not peel until adding them to the frying pan.

  3. Add the sugar and cinnamon to the melted butter and stir with the spatula until the butter and sugar are fully melted in the frying pan.

  4. Add 3 halves of banana to the frying pan and cover them with them the sugar mixture. Allow to cook for 4 minutes before turning over with the fish slice and cooking the other side for 4 minutes.

  5. Once cooked place the bananas on a plate. TIP! Be careful when moving from the frying as they will be soft and likely to split. Cover the plate with foil.

  6. Cook the remaining bananas.

  7. When the bananas are ready separate them to their serving plates. Add some coconut yoghurt to each plate for dipping in and crumble a Biscoff biscuit on top.

  8. Enjoy!.
