Chocolate Cupcakes

To me cupcakes are nostalgic. They take me back to my childhood and remind me of baking in school and baking with my Nana as these are one of the first bakes l learnt to make at home.

.

Cupcakes are also so versatile, with different flavours for the cupcakes and of course the fun ways that you can decorate them (give me sprinkles and bright colours any day).


So this morning my youngest and l have been busy together making these delicious chocolate cupcakes.

The recipe is simple to follow and they are very tasty. We chose to decorate these with a chocolate buttercream to which makes them the perfect chocolate fix however you can decorate as choose.

Chocolate Cupcakes

Prep time: 10  Minutes                      Cook time:   15 Minutes           Makes:  12 Cupcakes


Ingredients


175g of Self raising flour - sieved

150g of Caster sugar

125ml of Milk

100g of Butter

30g of Cocoa powder - sieved

2 Eggs

1 tsp of Baking powder

Pinch of Salt



Equipment


Mixing bowl

Spatula

Electric whisk

Muffin tray

Cupcake cases

Ice cream scoop

Cooling rack




Method


  1. Preheat the oven to 180C.

  2. Line the muffin tray with the cupcake cases.

  3. In the mixing bowl place the butter and sugar and cream together until the mixture is pale and fluffy.

  4. Add the sieved cocoa powder, baking powder and flour to the sugar and butter mixture.

  5. Once the ingredients begin to combine continue to whisk and slowly add the milk and eggs until a batter texture is formed.

  6. Using the ice cream scoop share the mixture evenly between the cupcake cases.

  7. Place the tray in the oven for 20 minutes until the cupcakes have risen and are spongy to the touch. TIP! Place a skewer into the centre of the cupcake, when this comes out clean then cupcakes are ready. If not then place in the oven for another 3 minutes and repeat if necessary.

  8. Once baked allow the cupcakes to cool for 5 minutes in the tray before moving to the cooling rack.

  9. Once cooled decorate as required.

  10. Enjoy!.
