Chocolate Dipped Madeleines

If you are wanting to challenge yourself with baking ....... I would suggest having a go at making Madeline's. I don't mind sharing my baking ooppsssyyyys !, being completely honest l have never made these before and when l finally got it right they did taste yum but gosh I find this little French delicacy tricky. I did not have a problem with making the sponge itself I just couldn't get the shell print on the sponge. I tried varying amounts of sponge mixture and different ways of putting on the tray but it took me some time. So in the end we chose to dip them in chocolate and therefore we created chocolate dipped madeleines.

Chocolate Dipped Madeleines
Ingredients
50g of Caster sugar
50g of Butter - melted
50g of Self raising flour
1/2 tsp of Honey
1/2 of Vanilla extract
1 Egg
1 Chocolate bar for melting
Equipment
Mixing bowl
Cooling rack
Eight shell Madeleine tray
Tablespoon
Pastry brush
Electric whisk
Method
Preheat the oven to 170C
Using the pastry brush dip lightly into the melted butter and use to brush the Madeleine shell tray. TIP! Brush lightly so you do not over oil the shells.
In the mixing bowl and using the electric whisk beat together the egg, sugar, honey and vanilla extract until combined and mixture is pale and fluffy. TIP! You should not see any sugar granules.
Add the flour in small portions and the melted butter and whisk again.
Using the spoon, spoon the mixture equally between the madeleine tray. TIP!Place the mixture into the middle of the shell and allow it to spread out.
Place in the oven and cook for 10 minutes. The madeleine’s should be golden brown and springy in texture.
Remove the madeleines from the tray and allow to cool on the cooling rack.

The Madeleines can be stored in an airtight container up to 4 days.
