Chocolate Truffles

Did you know that today is National chocolate truffles day? l did.... and therefore instead of baking with my sons as normal l decided that for date night, the hubby and l would be making truffles.
I love chocolate truffles but l have never taken the opportunity to make them unitl now and l have to say they are fun and easy to make. I am not a lover of dark chocolate but the hubby is so he made his with dark chocolate while l used milk chocolate and we shared the toppings.
There are so many toppings you can choose to coat your truffles however for this recipe l have chosen hazelnuts, coconut, and cocoa powder. Be warned you will get messy but you will have fun. Why not join in the celebrations and have a go at making for your own date night and share your images.

Prep time: 10 Minutes. Cook time: Chill for a minimum of 2 hours Makes: 12 Truffles
Ingredients
280g of Dark chocolate - melted
150ml of Double cream
1 tsp of Vanilla extract
Pinch of Sea salt
Toppings
Desiccated coconut
Crushed hazelnuts
Coco powder
Equipment
Mixing bowl
Spatula
Saucepan
Bowls for the toppings
Plate for truffles
Method
Place the melted chocolate in the mixing bowl and add the vanilla extract and sea salt
Pour the double cream into the saucepan and heat the cream before it boils on a low heat.
Once the cream has heated through pour on top of the melted chocolate and stir together with the spatula to make the chocolate ganache. Place the bowl in the fridge for at least 2 hours to chill. TIP! You can leave in the fridge overnight if preferred.
When the ganache is chilled begin to divide the ganache into equal sized balls. As you are making the balls, the chocolate will begin to soften so you will need to do the next steps quickly.
Dip and cover the ganache in the toppings you have chosen and place on the plate.
Place in the fridge until you are ready to serve.
