Cinnamon Muffins

Autumn is here.... while the cold mornings and evenings are now upon us do you have that need to reach for the comfort food yet? If this is a yes then these cinnamon muffins are a must for you then.

We woke early Sunday morning and began baking to enjoy these cinnamon muffins for breakfast with our cereal (for the boys) and a vat of coffee (for me).

The recipe is very simple to follow and just the smell of these as you are whisking the ingredients together and they are baking in the oven, makes your heart sing and reminds you that Christmas is just around the corner.

Cinnamon Muffins

Prep time: 10 Minutes                    Cook time: 15 Minutes               Makes: 12 Muffins


Ingredients


250g of Plain flour

200ml of Milk

115g of Butter- melted

80g of Light brown sugar

80g of Granulated sugar

2 Eggs

2 tsp of Baking powder

2 tsp of Ground Cinnamon

1 tsp of Vanilla extract

1/2 tsp of Salt

1/4 tsp of Nutmeg


Topping


20g of Granulated sugar

2 tsp of Cinnamon




Equipment


2 Mixing bowls

Whisk

12 Muffin tray tin

12 Muffin cases

Jug

Ice cream scoop



Method


  1. Preheat the oven to 180C.

  2. Line the muffin tin with the muffin cases and place to the side for later.

  3. In one of the mixing bowls place the flour, light brown sugar, granulated sugar, baking powder, ground cinnamon, nutmeg, salt and roughly mix them together with the whisk.

  4. In the jug place the milk, eggs, butter and vanilla extract and whisk together until the ingredients are combined.

  5. Add the milk mixture to the flour mixture and whisk together until the ingredients are combined. Ensure the mixture is not over whisked.

  6. In the other bowl mix together the granulated sugar and cinnamon ready to sprinkle over the muffin mixture before baking.

  7. Using the ice cream scoop share the muffin mixture between each of the muffin cases and sprinkle with the cinnamon sugar before placing in the oven to bake for 15 minutes.

  8. Check the muffins are baked by placing a knife in the centre which should come out clean.

  9. Once baked leave the muffins to cool completely in the muffin tray and serve when ready.

  10. Enjoy!.
