Fall Favourite: Indulge in the Deliciousness of Brown Butter Apple Blondies

You would not believe how easy these are to make. You need a little time on your hands with peeling apples and making the brown butter but the taste once all these delicious ingredients are combined and baked it is worth it!
The recipe is simple to follow and these brown butter apple blondies have autumn and deliciousness written all over them. I am currently watching the boys playing in the garden while drinking a cup of tea and eating my 3rd one. Enjoy!

Prep time: 20 minutes Cook time: 20 minutes Makes: 12 blondies
For the apple blondies
2 Medium sized apples - peeled and chopped
50g of Light brown sugar
15g of Unsalted butter
1/2 tsp of Cinnamon
1/2 tsp of Nutmeg
156g of Plain flour
140g of Unsalted butter
55g of Light brown sugar
2 tsp of Vanilla extract
2 Egg
1 tbsp of Whipping cream
1/4 tsp of Salt
For the glaze
75g of Icing sugar - sieved
1 tbsp of the Brown butter from above.
3 tbsp of Whipping cream
1/2 tsp of Vanilla extract
1/8 tsp of Cinnamon
1/8 tsp of Nutmeg
1/8 tsp of Salt

2 Mixing bowls
Greaseproof paper
9x9 baking tin
Saucepan
Wooden spoon
Whisk
Cooling rack
Method
Preheat the oven to 170C
Line the baking tray with the greaseproof paper ready for the blondie mixture.
Begin with preparing the apples. Place the apples, sugar, cinnamon, nutmeg, and butter into a saucepan and heat over a medium heat for 5 minutes, stirring frequently.
When removed from the heat place the apples into the mixing bowl.
Brown the butter ready to make the blondies. Place the 140g of butter into the saucepan and heat with a medium heat, stirring constantly for 5 minutes. The butter should foam and then turn clear and then turn a brown colour.
Pour this butter into the other mixing bowl. Take out 1 tbsp of the butter ready for the glaze later.
Add the sugar, eggs, whipping cream, salt and vanilla extract to the brown butter and whisk together to form a smooth texture. When the ingredients are combined add the apples mixture and whisk together.
Add the apple batter to the prepared batter tin and bake in the oven for 35 minutes. The blondie should be golden in colour. TIP! Check the blondies are baked throughout by checking the middle with a skewer and if comes out clean then ready.
Leave the blondies to cool completely in the baking tray on the cooling rack.
When the blondies are cool enough begin to make the glaze. In a mixing bowl whisk together the saved melted brown butter and add the nutmeg, cinnamon, vanilla extract with the icing sugar and whipping cream. Whisk together until a smooth paste is formed.
Drizzle the glaze over the blondies and leave to set before serving.
Serve in squares or rectangles.
