Ginger Cake Tray Bake.

With a cold and rainy start to spring why not feel cosy and warm up with a little spice in a slice of ginger cake. This warming ginger cake is moist (thanks to the syrup) and tastes delicious. I personally like my ginger cake quite strong in taste, especially when served with custard or ice cream.


This ginger cake recipe is easy to follow and l bet the ingredients are already in your cupboard. This traybake can be a great pudding after a homemade Sunday roast or enjoy with a spot of afternoon tea.

When following the recipe you will notice I have used a large amount of ginger for this ginger cake for the spice so it can be adapted to 2 teaspoons instead if you prefer less spice.

Enjoy on its own or with custard, cream or ice cream.

Ginger Cake

Prep time: 15 minutes         Cook time: 35 minutes      Makes: 12 Slices


Ingredients


250g of Self raising flour

250g of Golden caster sugar

70g of Butter - softened

240ml of Hot water

1 Egg

3 tbsp of Golden syrup

1 tbsp of Ground ginger

1 tsp of Bicarbonate of soda

Mixing bowl

Greaseproof paper

Tray bake tin 9” x 13”

Spoon

Cooling rack

Jug

Fork


Method


  1. Preheat the oven to 180C.

  2. Grease the tray bake tin with butter and line with the greaseproof paper.

  3. In the mixing bowl place all the dry ingredients together and whisk together with your hand.

  4. Add the softened butter to the dry ingredients ad using your hands rub the butter into the dry ingredients until it resembles breadcrumbs.

  5. In the jug, add the egg and beat with the fork. Add the syrup and hot water and whisk together until combined.

  6. Pour the egg mixture over the dry ingredients and mix together with the spoon.

  7. Once the ingredients are combined pour into the tray bake tin and level the mixture out to ensure it is even.

  8. Place in the oven and bake for 35 minutes. TIP! If the cake is starting to brown as it is baking cover with foil.  Remember to check the centre of the cake with a skewer to ensure it is baked.

  9. Leave the cake to cool for 10 minutes in the tray before moving to the cooling rack.

  10. Cut into desired size and serve with Ice cream or custard.

  11. Enjoy!
