Heavenly Sweetness of Cinnamon Buns

Do you like a little sweetness in the mornings? Who doesn't ? why not swap up your cereal for warm, cozy, sweet cinnamon buns? What l love the most about cinnamon buns is they can be prepared the day before, sit in the fridge ready to be baked the following day and served warm and covered in cream cheese frosting.
Before beginning your morning routine pop them in the oven for 20 minutes do what you need to do and then enjoy with your morning coffee (or tea). Yum yum yum.

Prep time: 2 hours Cook time: 25 mins Makes: 12 cinnamon buns
Ingredients
For the dough
350g of Plain flour
180ml of Milk
50g of Granulated sugar
43g of salted butter
Yeast mixture - follow the instructions on the packaging of the dried active yeast.
1 tsp of Salt
1 Egg
For the filling
65g of Light brown sugar
45g of Salted butter - softened
1 tbsp of ground cinnamon
For the topping
115g of Philadelphia cream cheese - softened
80g of Icing sugars
30g of Salted butter - softened
1 tsp of Vanilla extract
Oil for the bowl
Butter to grease the dish being used for baking
Equipment
2 Mixing bowls
Spatula
Whisk
Saucepan
Bowl for dough to sit in - oiled
Cling film
Warm towel
Rolling pin
Serrated knife
Chopping board
Baking tin
Cooling rack
Greaseproof paper
Electric whisk
Method
Start with making the dough. In the mixing bowl, whisk together the flour, sugar and salt.
In the saucepan place the butter and milk and heat on the hob until the butter has melted and whisk slowly until the liquid is warm to touch. TIP ! Do not allow to boil
Begin to make the yeast mixture following the instructions on packaging.
Add the yeast mixture to the butter and milk and whisk again until it has dissolved.
Pour the butter and milk mixture over the flour mixture.
Add the egg and using the spatula stir the ingredients together until they are combined. A soft dough should form.
On your kitchen side lightly flour the are and your hands and begin to knead the dough for up to 10 minutes. TIP! If too sticky add 2 tsp of flour.
Place the dough into oiled bowl and cover with cling film and a warm towel and place to side for 1 hour until the dough has doubled in size. TIP! The size will depend on the room temperature.
Lightly cover your kitchen side with flour again and when the dough has doubled in size transfer to the flour and roll the dough with the rolling pin to a 36 x 20cm rectangle.
Begin to add the filling. Using the softened butter spread this over the dough, leaving a 1 inch margin around the edges.
In another bowl combine the cinnamon and light brown sugar and then sprinkle over the butter you have just spread on the dough and slightly pressing it down.
Starting at the shorter edge of the dough push the edge to meet and then continue to tightly roll the dough to make a log shape. Cut off the edge that does not contain any sugar mixture.
Using a serrated knife cut the dough into 1 inch sections.
Grease the baking dish you will using and line with greaseproof paper and place the buns into these.
Cover the buns with cling film and a warm towel again and leave at room temperature for 40 minutes.
Preheat the oven to 190c and place the buns in the oven to bake for 40 minutes.
Once baked leave to cool in the pan for 10 minutes before adding the topping.
You are ready to make the topping. In the mixing bowl add the Philadelphia, icing sugar, butter and vanilla extract and whisk together with the electric whisk until smooth and fluffy.
Spread the topping over the buns and serve immediately. TIP! Only top the buns that are going to be eaten immediately as can go funny.
