No Bake Chocolate and Peanut Butter Oat Bars

Prep time: 15 minutes Cook time: 2 hours in the fridge Makes: 9 servings

Ingredients

280g of Rolled oats

180g of Butter- softened

120g of Light brown sugar

1 tsp of Vanilla essence

1/4 tsp of Sea salt

200g of Chocolate

250g of Smooth peanut butter

Extra butter for greasing the baking tin

Equipment

9x9” square baking tin

Greaseproof paper

Saucepan with boiling water for Bain Marie

Saucepan for oat mixture

2 mixing bowls

Spatula

Wooden spoon

Teaspoon

Clingfilm

Method

  1. Grease the baking tin with the butter and line with the greaseproof paper.

  2. Break up the chocolate bars into one of the mixing bowls and place on top of the saucepan with the boiling water. TIP! Don’t let the water be touching the bottom of the bowl. Let the chocolate melt and stir continuously with the spatula.

  3. When the chocolate begins to melt add the peanut butter and stir to combine the chocolate and peanut butter. Once melted set to side.

  4. Using the other saucepan on a low heat, add the butter. Once melted stir in the sugar and stir to combine the ingredients. Stir until the sugar has dissolved.

  5. Add the vanilla essence and stir again.

  6. Add the oats and stir until the ingredients are combined and the oats are covered in the butter and sugar. Leave to cook on the low heat for 2 minutes.

  7. Now you are ready to begin building your layers. In the baking tin, using half of the oat mixture make your bottom layer and press the oats down.

  8. Pour the melted chocolate and peanut butter mixture over the top, saving some to sprinkle over the top.

  9. Place in the fridge for 10 minutes to allow the chocolate and peanut butter to harden slightly.

  10. Complete the final layer by combining the oat mixture on top, covering all the chocolate and peanut butter.

  11. With the saved chocolate and peanut butter drizzle over the top with the teaspoon for decoration.

  12. Cover with the clingfilm and place in the fridge for 2 hours to set.

  13. When ready to serve, cut into squares.

  14. Enjoy!
