Lemon Curd Cookies

After making our own lemon curd the boys and l made these delicious sweet, melt in your mouth lemon curd cookies for an afternoon treat.
I would recommend making your own lemon curd to then enjoy these cookies that little bit more. Simple and east to follow recipe. We rolled our cookie balls in granulated sugar to add further sweetness and texture to the taste. Let us know what you think of them if you bake them too. Enjoy!.

Lemon Curd Cookies
Ingredients
225g of Plain flour
200g of Butter
45g of Cornflour
70g of Icing sugar
1 tsp of Vanilla Extract
2 tbsp of Granulated sugar
Lemon Curd ( see homemade recipe if preferred)
Equipment
Greaseproof paper
Baking tray
2 Mixing bowls
Electric Whisk
Small Ice cream scoop
Spatula
Cooling rack
Method
Preheat the oven to 180C.
Line the baking tray with the greaseproof paper. In the mixing bowl beat together the butter, vanilla extract and sugar with the electric whisk.
In the other mixing bowl, whisk together the flour and cornflour.
Slowly add the flour mixture to the butter mixture, using the spatula to bring the ingredients together to make the dough.
Sprinkle the granulated sugar on the work surface.
Using the ice cream scoop, make a ball of cookie dough, and lightly roll in the granulated sugar before placing on the greaseproof paper. TIP! We made larger cookies, however smaller is best.
Use your thumb to make an indent in the middle of the cookies and fill with the lemon curd. TIP! Why not try making your own lemon curd, see our recipe for details.
Bake in the oven for 12 minutes until they begin to slightly brown.
Once baked leave on the baking tray for 10 minutes before moving to the cooling rack to cool completely.
