Mince Pies

What would you say is a must have Christmas food? sprouts? yule log? trifle or are you the same as hubbie and would say a mince pie? Such a simple tasty treat to make. The sweet pastry, the fruity filling and dipping into a little goodness of brandy cream. Follow the simple recipe with the use of puff pastry, ready in 20 minutes for you to enjoy!.

Ingredients
1 box of Ready to roll puff pastry
1 jar of Mincemeat or you can make your own
1 tbsp of Demerara sugar
1 Egg - beaten
Butter for greasing the baking tin
Icing sugar for sprinkling
Equipment
12 hole baking tray
Pastry brush
Small bowl for egg wash
Cooling rack
Fluted cookie cutter (one large and one smaller)
Teaspoon
Sieve
Method
Preheat the oven to 180C.
Grease the baking tray with the butter
Roll out the pastry sheet on the work surface and cut out 12 pieces of pastry with the large cutter.
Place the cut out pastry into the baking tray holes and gently press down with your finger to fit inside the tin.
Place 1 teaspoon of the mincemeat into the centre of each of the pastry circles.
With the left over pastry cut out 12 pieces of pastry with the smaller cutter and place on top of the mincemeat.
Using the beaten egg, brush over the top of the pastry with the brush and sprinkle the Demerara sugar over each of the mince pies.
Place in the oven for 10 - 12 minutes, until the pastry is golden.
Leave to cool in the baking tray for 5 minutes before taking out and placing on the cooling rack.
When warm sprinkle with icing sugar and serve.
