No Bake Vanilla Cheesecake

As you may know cheesecake is one of my top 5 puddings. There are so many flavours that you can a cheesecake be which is why it is such a versatile pudding to make. So we have chosen to make a no baked vanilla cheesecake as part of our monthly cheesecake challenge. This tasty cheesecake ( we do like ours to be of that vanilla flavour) is so easy to make. We always use Philadelphia cream cheese when making ours. Have a go at making from the recipe below and show us your pics. Enjoy!.

No Bake Vanilla Cheesecake

Prep time: 15 minutes Cook time: Bake overnight or up to 6 hours Makes: 9 slices


Ingredients


For the base


250g of Chocolate digestives - crushed

80g of Butter - melted


For the filling


750g of Philadelphia cream cheese

300ml of Double cream

80g of Icing sugar

1 tbsp of Vanilla extract


Butter for greasing the cake tin


Equipment

9 inch spring form cake tin

2 mixing bowls

Electric whisk

Greaseproof paper

Wooden spoon

Fork

Spatula


Method


  1. Grease the cake tin with butter and line it with the greaseproof paper.

  2. In one of the mixing bowls place the crushed chocolate biscuits and pour over the melted butter. Mix together with the spoon to ensure the biscuits absorb the butter.

  3. Once mixed add the biscuit base to the cake tin and spread it evenly and press down with a fork to seal it.

  4. Place in the fridge while making the topping.

  5. In the other mixing bowl place the cream cheese and the icing sugar and whisk them together using the electric whisk on a low setting until they are combined. Add the vanilla extract.

  6. Pour the double cream onto the cream cheese mixture and continue to whisk until the ingredients are combined and you should have a thicker mixture. TIP! Do a taste test to check the vanilla. This is a personal preference. Do not over whisk the mixture.

  7. Add the cheesecake filling to the top of the biscuit base spreading evenly with the spatula.

  8. Place the cheesecake in the fridge for 6 hours or overnight.

  9. Serve when ready.
