Oaty Peanut Butter and Choc Chip Cookies.

Wow what a mouthful this recipe is. The boys wanted cookies....so we made cookies and I got to choose the flavours.

I don't know about you but l currently have a really sweet tooth and when we don't have anything in the house to satisfy this l will delve into the back of the cupboard and grab the peanut butter and armed with a spoon will eat a spoonful of it (maybe 2 spoons). Please don't judge me!!

With it being national oat cookie day this week I decided to add some oats to the recipe and throw in a few choc chips and voila oaty peanut butter and choc chip cookies.

This recipe is very simple to follow and easy to make and within 10 minutes they will be ready to devour. At the time of writing of this l have actually eaten 4 cookies, allowing the boys to only have 1 each with their cup of milk.

These cookies are oh so tasty, they can be enjoyed warm, served alone or with some ice cream to turn from treat to pudding.

Oaty Peanut Butter and Choc Chip Cookies


Prep time: 10Minutes                Cook time: 10 minutes          Makes: 15 cookies


Ingredients


250g of Crunchy peanut butter

135g of Light brown sugar

100g of Chocolate Chips

90g of Rolled oats

1 tsp of Vanilla extract

1/2 tsp of Bicarbonate of soda

1 Eggs


Equipment


2 Mixing bowls

Baking tray

Greaseproof paper

Wooden Spoon

Whisk

Cookie scoop

Cooling rack


Method


  1. Preheat the oven to 180C and line the baking tray with the greaseproof paper.

  2. In one of the mixing bowls place the sugar, oats and bicarbonate of soda. Mix together with the whisk.

  3. In the other mixing bowl place the peanut butter, vanilla extract and eggs. Whisk together until the ingredients are combined.

  4. Add the oat mixture to the peanut butter and using the wooden spoon mix together.  Add the chocolate chips and fold them in the wooden spoon.

  5. Use the cookie scoop and begin to make balls of dough and place them on the baking tray. Gently flatten the cookie balls. TIP! The cookies will spread slightly so ensure space between them on the tray.

  6. Bake the cookies in the oven for 10 minutes. They should be just turning a golden colour.

  7. Leave the cookies on the tray to cool for 10 minutes.

  8. Before serving sprinkle with sea salt.

  9. Enjoy!.
