One bake Cupcake

ERRR hello where have l been ??? under a rock??... why did l not know about one bake goodies before... cupcakes, pies, cookies... these would have saved me in my teenage years. So I read about these while l was away on holiday and had a microwave oven only to live by. My Mother in Law had planned to bake me a cake while we were away for my birthday however there was no oven to bake with so she had to improvise, reading about them l wanted to make one, and so I decided to try making a one bake cupcake upon getting home. So now we are home and l have made one... still delicious as a cupcake is just l would judge more sweeter. If you have never made one, go for it and try.... I did not feel guilty about eating it and did not have the battle of wills of trying not to eat the rest in the batch ... as there was only one cupcake there. Enjoy!.

One Bake Cupcake

Prep time: 10 minutes Cook time: 15-20 minutes Makes: 2 Cupcakes


One bake Cupcake


Ingredients


3 tbsp of Granulated sugar

1 tbsp of Milk

5 tbsp of Self raising flour

1 tbsp of Butter - melted

1 tbsp of Vegetable oil

1 Egg white

1 tsp of Vanilla extract

1/2 tsp of Baking powder


200g of Caster sugar

Sprinkles

2 Egg Whites


Equipment


2 Cupcake cases

Cupcake baking tray

Mixing bowl/jug

Spatula

Whisk

Tablespoon

Cooling rack


Method


  1. Preheat the oven to 180C.

  2. Line the cupcake tray with the cupcake cases.

  3. In the mixing bowl add the milk, egg white, butter and vanilla extract. Mix together with the spatula until smooth.

  4. Slowly add the sugar to the mixing bowl and then the flour, stirring carefully to avoid over mixing.

  5. Using the tablespoon, share the mixture between the cupcake cases.

  6. Bake in the oven for 15 - 20 minutes. The cakes should be golden brown and spongey to the touch.

  7. When baked allow the cupcakes to cool in the cupcake tray for 5 minutes before moving to the cooling rack. TIP! Allow to cool completely before decorating.

  8. Once cooled decorate the cupcake as you desire. We chose to use meringue icing with sprinkles. ( see separate recipe for meringue Icing).

  9. Enjoy!.
