Peach Cobbler

We were up and in the kitchen at 8 am this morning making this delight ready to enjoy for pudding after lunch with friends. The boys were in charge of the peaches and mixing them with their spices while l took on making the dough and together we made dough balls and squashed them to cover the peaches.

While making this pudding it reminded me of something that my Nana would have made. I have enjoyed eating a peach cobbler before but have never made one and l have to say it was fun to make and rather peaceful (with 2 loud boys) so early in the morning.


I like my peach cobbler to have a little warming feel to it so we added a little ginger with the cinnamon in both the peaches and the dough. I knew I was going to serve with ice cream so knew this would add to the taste. Other recipes I have seen have nutmeg in the dough to add more flavour.

A peach cobbler straight from the oven ready to serve.
Peach Cobbler

Prep time: 10 Minutes                Cook time: 40 Minutes                        Makes: 6 Servings


Ingredients


For the peach filling


3 tins of Peaches

2 tbsp of Golden caster sugar

1 tsp of Cinnamon

2 tsp of Ground ginger


For the dough topping


150g of Plain flour

150g of Butter- cubed

120g of Golden caster sugar

2 tbsp of Oats to sprinkle on top

1tsp of Baking powder

1 tsp of Cinnamon to sprinkle on top

1 tsp of Ground ginger to sprinkle on top

1 tsp of Brown sugar to sprinkle on top.

1 tsp of Milk

Salt

1 Egg



Equipment


Baking dish

Mixing bowl

Electric whisk

Sieve

Fork

Pastry brush

Small bowl



Method


  1. Preheat the oven to 180C.

  2. Using the sieve, drain the peaches. TIP! Ensure the peaches are fully drained, leave in the sieve while completing the next step.

  3. Grease your baking dish with some of the butter to prevent the cobbler sticking in the dish.

  4. Place the peaches in the baking dish and 2 tbsp of the golden caster sugar, nutmeg and ginger. Using the fork carefully mix the ingredients together.

  5. In the mixing bowl place the flour, baking powder, golden caster sugar, pinch of salt and whisk together.

  6. Add the butter to the mixing bowl whisk together until breadcrumbs form. Add the egg and the texture should change to a dough.

  7. Take handfuls of the dough and flatten before placing over the top of the peaches. TIP! Leave gaps between the dough balls to allow the dough to spread.

  8. In the small bowl place the oats, cinnamon and brown sugar and mix with fork ready to sprinkle on the dough.

  9. Brush the dough with the milk and sprinkle the topping from the small bowl over the dough.

  10.  Place in the oven and bake for 45 minutes.  TIP! If the dough begins to brown cover with foil to prevent burning.  Gently lift one of the dough balls to check the biscuit has cooked underneath.

  11.  Serve with ice cream.
