Peanut Butter and Chocolate Cupcakes

If you are a peanut lover, then this recipe is for you. These peanut butter and chocolate cupcakes are simple to make with this easy to follow recipe. The cupcakes are chocolatey and moist, topped with the sweetness and nutty flavours of the peanut butter frosting making the combination pure bliss.


We added further texture and taste by sprinkling the cupcakes with chopped peanuts.

Peanut Butter and chocolate cupcakes can be enjoyed with friends, or just enjoy them yourself with a cuppa.

Peanut Butter and Chocolate Cupcakes

Prep time: 10  Minutes                      Cook time:   15 Minutes           Makes:  12 Cupcakes


Ingredients


For the cupcakes


175g of Self raising flour - sieved

150g of Caster sugar

125ml of Milk

100g of Butter

50g of Cocoa powder - sieved

50g of Smooth peanut butter

2 Eggs

Pinch of Salt


For the frosting


100g of Peanut butter

100g of Icing Sugar- sieved

80g of Butter (room temperature)


Equipment


Mixing bowl

Spatula

Electric whisk

Muffin tray

Cupcake cases

Ice cream scoop

Icing bag

Icing tip.

Cooling rack



Method


  1. Preheat the oven to 160C.


  1. Line the muffin tray with the cupcake cases.


  1. In the mixing bowl place the butter and sugar and cream together until the mixture is pale and fluffy.


  1. Add the sieved cocoa powder, baking powder and flour to the sugar and butter mixture.


  1. Once the ingredients begin to combine continue to whisk and slowly add the milk and eggs until a batter texture is formed. Add the peanut butter and whisk again to combine.


  1. Using the ice cream scoop share the mixture evenly between the cupcake cases.


  1. Place the tray in the oven for 15 minutes until the cupcakes have risen and are spongy to the touch. TIP! Place a skewer into the centre of the cupcake, when this comes out clean then cupcakes are ready. If not then place in the oven for another 3 minutes and repeat if necessary.


  1. Once baked allow the cupcakes to cool for 5 minutes in the tray before moving to the cooling rack.


  1. Once cooled begin to make the peanut butter icing.  In the mixing bowl place the sieved icing sugar and butter into the mixing bowl and use the electric whisk on a low setting to combine the ingredients. Add the smooth peanut butter and continue to whisk.


  1. When the frosting is made begin to frost the cakes and place in the fridge until ready to serve.
