Peanut Butter Cookies

Peanut butter me up!. l love all things peanut butter ... peanut butter cups, peanut butter brownies and these peanut butter cookies are up there with them. You cant beat the sweetness of the flavour. However for me, it always has to be crunchy peanut butter.


Today is peanut butter cookie day and the boys and l have been busy making our peanut butter cookies ready to enjoy this afternoon for a treat. This recipe is easy to follow and makes 12 delicious crunchy cookies to enjoy so you will need crunchy peanut butter for the flavour.

Peanut Butter Cookies


Prep time: 15 minutes                    Cook time:    8-10  minutes        Makes:  12 Cookies


Ingredients


200g of Crunchy peanut butter

150g of Plain flour- sieved

100g of Butter - room temperature

100g of Light brown sugar

1 Egg

1 tsp of Baking powder

Pinch of salt


Equipment


Baking tray

Greaseproof paper

Mixing bowl

Electric whisk

Spatula

Fork

Cooling rack


Method


  1. Preheat the oven to 180C.

  2. Line the baking tray with the greaseproof paper.

  3. In the mixing bowl place the butter and sugar. Cream together using the electric whisk until they are combined.

  4. With the whisk on a low setting add the peanut butter and begin to add the flour, baking powder, salt  and the egg. Continue to whisk until all the ingredients are combined.

  5. Once combined use the spatula to scrape all the mixture to the centre of the mixing bowl and make a ball.

  6. Begin to separate the mixture into 12 equal sized balls and place them out on the baking tray giving space for a little growth while baking.

  7. Gently press down each cookie ball with the back of the fork to flatten and make indentation.

  8. Place in the oven for 8-10 minutes or until begin to brown.

  9. Once baked leave to cool on the baking tray for 5 minutes before transferring to the cooling rack.

  10. Serve when ready.

  11. Enjoy!.
