Pineapple Tarte Tatin

A Tarte Tatin is a traditional french dessert and is the perfect dessert for these summer evenings. As we are feeling the summer vibes we have opted to make a pineapple tarte tatin for that extra sweetness.
You will only need a few ingredients to make this delicious treat. Pineapple rings, make your own caramel sauce and puff pastry.
We opted to use shop brought puff pastry for this recipe however if you have the time you can make your own puff pastry.
This simple to follow recipe for pineapple tarte tatin will make a delicious treat and be ready within 1 hour. You can serve with ice cream or whipped cream.

Ingredients
1 packet of ready to roll Puff pastry
1 tin of Pineapple rings (you will need 6 pineapple rings)
100g of Caster sugar
25g of Unsalted butter
2 tbsp of Water
Handful of flour to cover the rolling pin

Small frying pan
1 Heatproof bowl
Fork
Rolling pin
Cooling rack
Plate
Method
Preheat the oven to 180C.
Grease the bowl lightly with butter.
On the work surface roll out the puff pastry with the rolling pin to a circular shape to cover the bowl. Prick the pastry with the fork.
In the frying pan add the sugar and water on a low heat. Allow the sugar to dissolve. TIP! Move the pan around to support the sugar to dissolve evenly. Do not stir the sugar.
When a caramel begins to form, add the butter and allow it to melt before adding the pineapple rings.
Cover the pineapple rings with the caramel and allow them to soften.
Once the pineapple rings have softened place them in the bottom of the bowl, overlapping them. Pour the remaining caramel sauce over the top of the pineapple.
Lay the puff pastry over the top of the pineapple rings, tucking in the pastry around the pineapple rings.
Place in the oven and bake for 35 minutes.
Once baked, leave to cool for 10 minutes in the bowl before turning out onto another plate.
Serve warm with ice cream.
