Rice Krispies Cakes

The sun is shining and after a busy hot day out yesturday at a theme park, today we are home playing, baking and kind of having a quiet one. Our baking adventure today has been a sticky one this morning making these old school favourites, Rice Krispies cakes.


When you google Rice Krispies cakes you can find various recipes for Rice Krispies cakes, some with golden syrup and others using marshmallows. Being vegetarian and not having suitable marshmallows at home and the boys will definitely be sharing these we have made ours using golden syrup.


Making these goodies has been fun with the boys and they are made in no time at all with a little time to set in the fridge. You will only need a few ingredients and we made ours tray bake style so was able to cut into smaller squares for the boys.

Rice Krispie Cakes

Prep time: 10 Minutes       Cook time: Place in the fridge for 30 minutes        Makes: 12


Ingredients


120g of Golden Syrup

90g of Rice Krispies cereal

15g of Butter

1 tbsp of Granulated sugar

1/2 tsp of Vanilla extract


Equipment


Mixing bowl

9 x 9”  baking tin

Wooden Spoon

Greaseproof paper

Saucepan



Method

  1. Line the baking tin with the greaseproof paper ready for the mixture.

  2. Put the Rice Krispies into the mixing bowl.

  3. In the saucepan, on a low heat  place the butter and once it begins to melt add the sugar, golden syrup and vanilla extract. Use the wooden spoon to combine the ingredients.  Once boiling take off the heat.

  4. Pour the butter mixture over the Rice Krispies and use the wooden spoon to coat all the Rice Krispies.

  5. Once all the Rice Krispies are covered pour the mixture in the baking tin and cover evenly. Use the back of the wooden spoon to press the mixture down firmly.

  6. Place in the fridge for 30 minutes to help setting.

  7. Once set cut into the sizes required and serve.

  8. Enjoy!
