Happy Valentines day everyone!


With it being half term, the boys and l have been busy in the kitchen making various cookies which all have a heart theme to them for today.


We have made choc chip, red velvet ones and pure chocolate.


The boys woke this morning with a love letter from their Mama to which my youngest responded with a sloppy kiss and my eldest an eye roll (charming) and the pug devouring his meaty treat.


We are going to spend the day eating our cookies with a movie about love lol.

Prep time: 20 minutes                   Cook time: 12 minutes                    Makes: 12 cookies



Ingredients


For the cookies


240g of Plain flour

225g of Butter

150g of White chocolate chips

25g of Cocoa powder

1 Egg

1 tbsp of Hot coffee

1 tbsp of Red food colouring

2 tsp of Vanilla extract

1 tsp of Baking powder

1 tsp of Bicarbonate of Soda



For the filling


340g of Philadelphia cream cheese

100g of Icing sugar

30ml of Milk


150g of White Chocolate chips


Equipment


2 Mixing bowls

Tablespoon

Electric whisk

Baking sheet

Parchment paper

Sieve

Fork

Spatula

Clingfilm

Heart shaped cutter (on this occasion)

Rolling pin

Jug

Cooling rack

Saucepan

Piping bag and thin nozzle.


Method


  1. Preheat the oven to 180C

  2. Line the baking sheet with the greaseproof paper ready for the cookies.

  3. In one of the mixing bowl sieve the cocoa powder, flour with the baking powder and bicarbonate of soda. Use the fork and briefly whisk together.

  4. In the other mixing bowl whisk together the butter and sugar to make a pale and creamy texture. Add the egg and vanilla extract and whisk again until the ingredients are combined.

  5. Using the tablespoon begin to add the flour to the mixture, whisking at the same time on a low setting. When the flour begins to look combined add the coffee and red food colouring.

  6. When the ingredients are combined fold in the white chocolate chips (150g)  with the spatula.

  7. Wrap the dough in the clingfilm and place in the fridge for a minimum of 30 minutes.

  8. When the time is up, roll out the dough to a thin layer and use the heart cutter to cut out the hearts and place on the baking tray.

  9. Bake in the oven for 10 minutes.

  10. Leave to cool completely on the baking sheet for 10 minutes before placing on the cooling rack.

  11. In the jug, place the Philadelphia, icing sugar and beat together until a smooth texture is created. Add a little of the milk.

  12. Once the cookies are cool, pair them up. Using the tablespoon, spread the cream cheese filling onto the bottom sides of each heart and push them together. Continue until all hearts are paired together with the cream cheese.

  13. In a small bowl and using the saucepan Bain Marie the chocolate chips to melt them.

  14. Spoon the melted chocolate into a piping bag and drizzle over half the hearts to decorate.

  15. Place in the fridge for chocolate to set and serve when ready.

  16. Enjoy!.
