Scary Sugar Shortbread Cookies

How is your half term going?


We have been busy in our kitchen making some more halloween goodies, in fact it seems to be a halloween theme all week so far. The boys wanted to make some cookies and use their halloween cutters to make some scary things and so we made some scary sugar shortbread coookies (try saying that fast 3 times).

A simple recipe to follow and only a few ingredients needed you can whip these up in under hour. They are tasty, crumbly and moreish. They reminded of the cookies I used to have at school. See the recipe below to make yours, why not do some baking today. Enjoy!.

Scary Sugar Shortbread Cookies

Prep time: 40 minutes Cook time: 15 minutes Makes: 12 cookies


Ingredients


240g of Plain flour

235g of Butter - softened

100g of Golden caster sugar

1 tsp of Vanilla extract

1tsp of Granulated sugar

1/2 tsp of sea salt


Equipment


Mixing bowl

Wooden spoon

Electric whisk

Baking tray

Greaseproof paper

Cutters (we went for halloween themed)

Clingfilm

Spatula

Rolling pin

Cooling rack


Method

  1. Line the baking tray with the greaseproof paper and leave to the side ready to the cookies on.

  2. In the mixing bowl place the sugar, butter, salt and vanilla extract and using the whisk together until the mixture is pale and fluffy.

  3. Slowly add the flour to the butter and sugar mixture whisking at the same time until a dough texture is formed. Use the spatula to get all the mixture out of the bowl.

  4. Lay the cling film out on the work surface and place the dough into the middle. Begin to roll the dough into a sausage shape about 1 inch thick before wrapping it up in the cling film.

  5. Place the dough into the fridge for a minimum of 30 minutes.

  6. Preheat the oven to 170c.

  7. After the dough has chilled, unwrap on the work surface and apply flour to the rolling pin and roll out till 1cm thick.

  8. Using your cutters of choice, cut these out of the dough and place on the baking tray.

  9. Place in the oven to bake for 15 minutes. The cookies should be slightly golden. They will soft however will hardened when cooled.

  10. Once baked leave to cool on the baking tray for 5 minutes before moving to the cooling rack.

  11. While on the cooling rack sprinkle some granulated sugar onto each cookie.

  12. When hardened they are ready to serve.
