Strawberries and Cream Lollies

You know Summer is here when you are making homemade iced treats. I love it!. Over the weekend the boys and l had a go at making our own strawberries and cream lollies.

Did you ever make your own squash lollies with the moulds growing up? This was something l made all the time with my Nana in the summer holidays as a child. My Nana had the best moulds and when making them she would never dilute the squash, so when they were frozen you were in for a treat on the first suck with how strong they were.


We have recently been strawberry picking and we had a few strawberries that surprisingy had not been consumed and therefore we whisked and diced some, mixed with whipping cream for extra creaminess to make our strawberries and cream lollies. These treats are perfect on the hot days we are currently having here in the UK and to avoid wastage of any strawberries.

You can pour your mixture into moulds like we did and freeze overnight or into a freezable dish to have as an icecream. The recipe is easy to follow and these are simple to make.

Prep time: 10 Minutes         Cook time: Overnight in Freezer             Makes: 6 Ice Lollies


Ingredients


160g of sliced Strawberries

150ml of Whipping cream

3 tbsps of Honey

2 tbsps of Water

1 tsp of Vanilla extract



Equipment


Ice lolly moulds

Mixing bowl

Food blender

spatula

Jug

Whisk

Fork


Method


  1. Place the sliced strawberries into the food blender and add the water and honey.  Blast the strawberries roughly to mash them.

  2. In the jug place the whipped cream and vanilla extract and whisk together until smooth peaks are formed. TIP! Be careful to not over whisk the cream.

  3. Gently pour the strawberries into the whipped cream and using the fork mix together to create a ripple effect of the cream and strawberries.

  4. Pour the mixture into the lolly moulds and place in the freezer overnight to set.

  5. Serve when required.

  6. Enjoy!
